As much as I loved both FMA's I so agree about those sudden art shift. They're unbelieveably annoying! So are thbose little red stars that appear over character's head to induicate annoyance or anger. One thing you love about Bebop, you don't see that. The show is so realistic it doesn't NEED that. If a character is angry or annoyed their faces can show that perfectly.

 

Another reason? The show is just so **beast** awesome!!

I dont know if this has been touched upon, but even though i myself dont complain or care too much for voice overs, ppl agree in the bussiness and out that this is one of if not the best dub of an anime. I think thats true and it seems like now they just try to get animes done and over with.

Well I like it because not only is the story very well written but the music is awsome too.  Most anime series have only a couple of songs they use for all the episodes, Cowboy Bepop has every episode with its unique theme.  The action is amazing too and the characters are very well conceived. 

 

The bottom line: most CB fans like plenty of other animes but this tends to be the most beloved because there is a great story, cool music and NO FILLER EPISODES.

It's one of those ones that did everything (at least mostly everything) right. Which naturally is hard to find.
