Generally speaking, yes there is less talky and more fighty.
They mostly cut out filler that was not present in the manga story.
DBZ Kai is just under 100 episodes and covers 3 of the 4 major story arcs of Dragon Ball Z.
The story ends with Gohan defeating Cell and Trunks returning to the future.
The series got great ratings in Japan but merchandise was not selling so Toei pulled the plug before starting the Buu saga and some would consider that a substantial loss.
Watching Kai in Japanese is really not much of an improvement besides revitalizing some visuals and improving the pacing by cutting out filler and long stare downs when nothing happens.
Watching Kai in English is a whole new ball game though. The script is considerably more accurate than the original FUNimation dubs (if you care about that) and generally the acting is better all around but some recasts my disappoint viewers of the previous dubs. In my opinion, if you are going to watch Dragon Ball Z dubbed then Kai is the best choice for the storylines it covers but you'll have to finish the story with original dub of the Buu saga.

Gohan's original voice or kai voice? I liked both but prefer the original. I haven't yet watched/heard Super Saiyan 2 Gohan in Kai though, I just can't think the new voice would sound badass enough for it to work there though honestly, but maybe I'm wrong...
