i know what the ouroboros symbol means

but does anyone know what the star  in the middle on the Homunculi stands for?

I think this will answer your question (I hope).  All of the additional symbols represent various religions.  The star is the Star of David

It doesn't really represent Judaism, it's a complex mathematical equation.  It has to do with the golden mean and the canon of proportion developed by the Egyptians and Greeks.  The Star of David is taken from these divine mathematic rules.

 

But, the link that you shared belongs to a group whose motto was 'There is no religion greater than Truth', and they followed the laws of equivalent exchange and all.  Unfortunately, the Theosophical Society is one of MANY Victorian era 'cults' , like the Rosecrucians and the Order of the Golden Dawn.  They had nothing to do with REAL alchemy, just borrowed the symbols found within it, smoked a lot of opium, had a lot of orgies and believed the sum of all that unlocked some kind of higher spiritual power.

The star of David has a few meanings mostly used a the representation of the Shield that protected David. The symbol is also often placed on interpretations of the Ring of King Solomon. King Solomon was said to have been able to control demons with his ring which could relate to the Homunculus  in a way.
