1]  Sesshomaru didn't have a choice, only one hand available.

2]  Inuyasha does swing the sword with one arm on occasion, for example, the first wind scar he directed at Muso.  That was one time he didn't do it because of a broken wrist.

Second, the whole question is about why not discard the hated useless sword?  Why carry it around if there is no way to wield the two swords at once?

Tenseiga has always seemed to be the better of the two swords to me anyway rather easily and is ultimately more important than the Tokijin...
